Summer Corn Salad

This Summer Corn Salad is my favorite side dish to make when the temps start to heat up! The corn is sweet, tomatoes ripe and I pretty much like avocado in everything!
It is great as a side dish accompanying anything grilled, like chicken, fish or a burger, but can also be made as a main dish if you double your portion and add a protein like grilled shrimp or diced chicken right to the bowl. This is a great salad to take to an outing, but add the avocado last minute to prevent browning. (the lemon juice does help keep it from browning too much) If you are following Weight Watchers, this recipe has 4 points per serving. You will make this easy salad over and over again! Thank you for this amazing recipe!!
